Spherification is a spectacular
culinary technique that we put into practise at elBulli
in 2003 and that allows the creation of recipes never
imagined before. It involves the controlled jellification
of a liquid that, once submerged in a bath, allows you
to obtain creations in the shape of spheres of different
sizes: caviar, eggs, gnocchi, ravioli... Moreover the
resulting spheres can be manipulated and permit the introduction
of solid elements inside them that remain suspended in
the liquid, which means that two or more flavours are
obtained in one creation.
There are two types of Spherification: Basic and Inverse.
In both procedures the use of specific tools (EINES), which
are necessary for all the creations, are required.
