Inner cooking

Fakircook is a grill developed by Jordi Herrera of the Manairó restaurant in Barcelona. It is a inox (stainless steel) structure with handles on which lines of steel nails are placed, a bed where meat and fish are cooked evenly and quickly by a process which starts from the centre of the product, avoiding the loss of juices and nutrients. The procedure is simple: first heat the nails of the grill directly on the gas flame, with the grill upside down resting on the handles; then turn it around, place on the nails the products and they will cook in a few seconds. The food absorbs the aromas which we have previously sprinkled on the grill. At the end we turn brown the product with a blow torch.
